1. Hominy and Spicy Chicken Soup

As you will probably discover, it’s so easy to spice up the typical chicken soup with some chopped chipotles in adobo.

Ingredients

  • 1 chopped onion
  • 2 chopped celery stalks
  • 1 chopped clove garlic
  • 2 tablespoons of olive oil
  • Some salt
  • 4 cups of low-sodium chicken broth
  • 2.5 cups of shredded rotisserie chicken
  • A 15 oz can of rinsed hominy
  • 1 tablespoon of chopped chipotles in adobo
  • Tortilla chips
  • Some fresh salsa

Directions

  1. Cook the celery, garlic, and onion in the oil (in a large skillet) over medium heat.
  2. Add a sprinkle of salt and stir occasionally until the contents soften. Let the mixture cook for about 5 minutes.
  3. Add the chicken, chicken broth, chipotles, and hominy. Let them simmer for about 5 minutes.
  4. For the optimal experience, serve the soup with the salsa and tortilla chips.

2. Tomato Soup with Croutons and Parmesan

I recommend making easy home-made croutons for crispy, delicious soup toppings.

Ingredients

  • 2 chopped onions
  • 2 tablespoons of olive oil
  • Some salt
  • Whole peeled tomatoes (28 oz)
  • 3 cups of low-sodium chicken broth
  • 1 teaspoon of dried oregano
  • 1 cup of croutons
  • 2 ounces of shaved Parmesan

Directions

  1. Fry the onions in the olive oil in a large pan over medium heat. Stir occasionally until the onions soften.
  2. Add the chicken broth, oregano, and tomatoes. Let them simmer for around 12 minutes or until they start thickening.
  3. Transfer the contents to a blender and blend until you get a smooth broth. Top with the Parmesan and croutons, and then serve.

3. Mushroom Barley Soup

Although Pearl barley typically takes quite a while to cook, its great flavour and numerous health benefits are what make it worth the time.

Ingredients

  • 2 tablespoons of olive oil
  • 1 pound of sliced mushrooms
  • 4 cups of chopped carrots
  • 2 garlic cloves (sliced)
  • 2 sprigs of fresh thyme
  • Some salt and black pepper
  • 5 cups of low-sodium vegetable broth
  • A cup pearl barley
  • 1 tablespoon of flat-leaf parsley (chopped)

Directions

  1. Heat the oil in a large pan over medium heat. Add the carrots, mushrooms, thyme, garlic, and some salt and pepper. Let the blend cook for around 30 minutes or until the carrots get tender. Be sure to stir from time to time.
  2. Put in the barley and vegetable broth. Let them simmer for 30 minutes or until the barley gets tender.
  3. Top with the parsley and serve.

4. Creamy Spinach and Broccoli Soup

I recommend blending together all the ingredients in an electric blender to get the best results.

Ingredients

  • 2 chopped leeks
  • 3 tablespoons of unsalted butter
  • Some salt and black pepper
  • 5 cups of low-sodium vegetable broth
  • 1 bunch of chopped broccoli
  • A small peeled and chopped russet potato
  • 5 oz of spinach
  • Sour cream

Directions

  1. Fry the leeks and butter in a large skillet over medium to high heat for about 5 minutes. Add some salt and pepper and be sure to stir occasionally.
  2. Add the broccoli, potato, and vegetable broth and let them simmer for about 20 minutes. Add the spinach and let it simmer until it wilts.
  3. Transfer the entire mixture to an electric blender and puree. Top with the sour cream and pepper, and then serve.

5. Toasted Garlic and Cauliflower Soup

This is a dairy-free soup with few ingredients but a great flavour.

Ingredients

  • 3 sliced garlic cloves
  • 2 tablespoons of olive oil
  • 1 small chopped head cauliflower
  • 6 cups of low-sodium chicken broth
  • 1 tablespoon of thyme leaves
  • Some salt and black pepper

Directions

  1. Put the oil in a large pot, add the garlic and let it cook over medium heat for about 3 minutes or until it attains a gold colour. Remove the garlic from the heat and reserve it.
  2. Add the cauliflower, thyme, chicken broth, salt, and pepper to the pot and let them simmer for about 15 minutes or until they get tender.
  3. Transfer the contents to an electric blender and puree them. Top with the garlic and serve. You can also add a little more olive oil and some extra thyme for an even better taste.
